Y’all we are almost in January already! This year has gone by so fast. Between having a baby and trying to stay on a budget the BEST thing for me to do is Meal Plan. Plus it helps us live a healthier life style. We have started to introduce MORE and FRESH produce. We no longer look at each other asking “What do you wanna eat?” and “Who’s gonna cook dinner tonight?”. I know most meal plans start Monday- Sunday but since my husband has a inconsistent work schedule we don’t always grocery shop on the same day every week. So lets get to it!
Saturday- Cajun Chicken & Rice
Sunday- Spaghetti, Salad & Texas Toast
Monday- Leftovers
Tuesday- Baked Chicken Thighs, Broccoli, Sweet Potato & Corn Cakes*
Wednesday- Baked Ziti, Salad
Thursday- Leftovers
Friday- Goulash

I do have a 7 month old so he mainly eats Beech-nut Naturals for dinner but the night that I make the sweet potato cakes he will try those. It does call for cayenne pepper, so depending on the spice level.
